I’ve said it once, and I’ll say it again: I love chicken nuggets.
Chicken nuggets have been a huge constant in my life—next to the little permanent hole above my belly button that signals a time of teen angst marked by my 11th grade “rebellious” naval piercing. While my palate has changed over time, my affinity for chicken nuggets has persevered and proven to be a bit of a personality trait.
So when I admit, “I don’t think I could ever be a vegetarian,” the sole reason is that I’m not yet willing to part with who I am (which happens to be 23 percent chicken nugget). That being said, I’m not sleeping on how tasty eating vegetarian can be. One look at any of the drool-worthy meatless recipes featured below and I know that if it weren’t for my committed relationship with nuggets, I could go without meat for the rest of my life.
